kewl whole wheat vegetable pizza
what you need:
1 package of fresh spinach leaves
1 package of mushrooms (chopped)
1 red bell pepper sliced long
1 yellow pepper sliced long
1 green pepper sliced long
1 whole wheat pizza crust
1 package of shredded low fat mozzeralla cheese
extra virgin olive oil (for brushing whole wheat pizza crusts)
olive oil (for spraying pans)
salt to taste
pepper to taste
garlic powder to taste
what to do:
1. Preheat stove to 375 degrees
2. Coat top of whole wheat pizza crust with a light layer of Extra Virgin Olive Oil
3. Toast lightly warm pizza crust for 2-4 minutes on 375 degrees
4. Remove lightly toasted pizza crust from the oven and set aside
5. In a pan, season fresh spinach with (salt, pepper & garlic powder to taste.) In light coat of olive oil spray, sautee mushrooms in a separate pan and the same for the sliced peppers. Kewl tip: use a little olive oil on the peppers since they are more dense
6. Once all vegetables are cooked, layer whole wheat pizza crust with cooked vegetables: spinach on the bottom, then mushrooms, then multicolored peppers
7. Sprinkle low fat mozzerella cheese on top
8. Put pizza in the oven on 375 for approx 3-4 minutes to melt cheese
9. Slice and enjoy- serves 6 large slices or 8 medium slices!
KewlTip: If you like other vegetables, feel free to add them. I have made this with egglant and broccoli and these are great to add. If you like tomato sauce, feel free to add it too.
