seared scallops
what you need:
1 1/2 pounds of sea scallops
3 teaspoons extra virgin olive oil
1/4 teaspoon coarse black pepper
1/2 teaspoon salt
what to do:
1. rinse scallops and place on plate to dry
2. place skillet on medium high stove burner until hot
3. sprinkle scallops with the salt and pepper and mix in olive oil
4. place scallops in the skillet
5. cook 5-6 minutes
6. serve scallops over mixed greens and cherry tomatoes
makes 4 servings
