cucumber boats
These delicious cucumber boats don’t require any fuel or docking! They’re so easy and fun to make!
what you need:
2 long cucumbers (English cucumbers work well)
2 packages of chunk light tuna packed in water
2 tbsp of light mayonnaise
2 celery stalks, diced
2 carrots, diced
8 cherry tomatoes
fresh dill to taste
what to do:
1. Lay cucumbers on a cutting board. Using a knife, carefully remove a long, thin slice, running from end to end of the cucumber, from one side of cucumber in order to expose the seeds.
2. With the exposed seed-side facing up & the opposite side laying flat on the cutting board, use a small spoon or melon baller to carve out cucumber seeds by digging into the seedy core of the cucumber from end to end. Remove the seeds & the watery interior, but be sure to leave enough flesh all throughout the inside of the cucumber so that it does not fall apart! The cavity created in the cucumber resembles a cucumber boat that you can fill.
3. Mix the tuna & light mayonnaise together. Add in fresh dill, diced celery, & diced carrots.
4. Stuff the inside of your cucumber with scoops of fresh tuna salad, & top with cherry tomatoes to decorate. Enjoy!
Makes 2 Cucumber Boats.
KewlTip: Add salt, ground black pepper, and garlic powder (all to taste!) into the tuna salad.
